Acorn Squash Soup
Today, I would like to share my kale soup with acorn squash recipe. It has a fall taste from acorn squash, and it gives you little spicy kick with cayenne pepper. Most importantly, it is really a healthy soup

Read MoreThanks to our good friends at Lost Burn Farm, I had a ton of organic locally grown kale picked yesterday. Our first rainy Friday night of winter worked out to be a perfect. We had some vino, good friends and the fire going. I was waiting for a night like this to finally experiment with this recipe given to me by my bestie and favorite foodie friend Megan Nutt. I of course had to alter some things to make it healthy and put my spin on it.
Read MoreThis soup is great to make when you are sick or even when you just feel like having a light healthy meal. The broth is both soothing and spicy, rich in flavors. I finally had an appetite after being sick so I decided to add chicken to mine.

Read MoreI made this recipe with my 89 year old Italian Grandpa we call pops as some of you know. He is a perfect example of how significant an influence our genetics have on us... He also proves most doctors, nutritionist, and people in my field WRONG. Smoking 2 packs of non-filtered Camel cigarettes a day for over 50 years, eating 2-3 eggs a day, not exercising, consuming large quantities of alcohol, and eating most food that comes out of a package, bread, pasta, and cured meats... an Italian should ;) This legend reads a book a day and has not lost any of his memory and continues to expand his intelligence as each day presents itself. I am not saying that any of the above things he does are something any of you should do, but damn I hope he passed me down some of these genes to live to be old, wise and "healthy".

Read MoreCioppino is a tasty Italian fish and shellfish stew. My dad grew up in an Italian household where this was a regular dish. Tonight when we were making this he informed me that this stew was created during the Depression because seafood was cheap, and families could throw it all in large pot and serve a hearty stew.
