Thanks to our good friends at Lost Burn Farm, I had a ton of organic locally grown kale picked yesterday. Our first rainy Friday night of winter worked out to be a perfect. We had some vino, good friends and the fire going. I was waiting for a night like this to finally experiment with this recipe given to me by my bestie and favorite foodie friend Megan Nutt. I of course had to alter some things to make it healthy and put my spin on it.

You can throw it together real quick and make it simple like I did last night, or make Red Posole which is one more step (steps are explained below). No matter what type of Posole you make, I promise it will be a hit. Of course there are a few ingredients you must have like hominy and pork (or chicken) to make this dish, but from there you can get creative and use whatever ingredients you have in the house.
