Posole (Pozole)

Posole is a traditional hominy-based Mexican stew. This is a healthy broth based soup that has so many varieties. You can throw it together real quick and make it simple like I did last night, or make Red Posole which is one more step (steps are explained below). No matter what type of Posole you make, I promise it will be a hit. Of course there are a few ingredients you must have like hominy and pork (or chicken) to make this dish, but from there you can get creative and use whatever ingredients you have in the house.
