I threw this recipe together when I realized I had to use the beautiful heirloom tomatoes that were siting in my fridge. It also was a spin on a traditional salsa, and since it was national taco day, it was perfect! I have never used cherry tomatoes before, but they worked out perfect and were quick and easy to chop. We put this salsa on some tacos we made, but it could also be great on top of fish!

What makes chia seeds perfect for this raw jam is their ability to absorb almost 10 times their weight in water and create a kind of gel-like consistency (it’s also what makes them a great substitute for eggs in lots of recipes!). This recipe is awesome because it is hard to make jam without using a thickening agent. Thank god chia forms a gelatinous gel!

I love them because when you have a sweet tooth (which in my family is pretty much every night), you can whip these puppies up in 8 minutes! Figs are more then just a FIG NEWTON! Sure you have heard of figs. You can get dried figs all year round, but try to only eat fresh figs that we are so lucky to have in abundance. Fig trees are everywhere in California and come in green, purple, brown, and red.
Figs are full of fiber which you probably knew from the crunchiness in the seeds that fill them. They also have a high amount of potassium which helps with blood pressure. Figs are a great dessert alternative because of their natural sweetness. I like to put them on top of Greek Yogurt for breaky or just alone as a snack with some nuts.
