Cocoa Chia Pudding
I know I need to relax with my chia seed obsession but my friend Case got me a Chia cookbook and I have just been getting nuts. Chia aka CHILA! My 90 year old grandfather who is 90 years old and my best friend, is not eating every morning and loving it.
Chia is not just a craze- them being called one of the healthiest foods on earth- its true.
Chia seeds are rich in fat-burning omega-3 fatty acids, and they’re packed with antioxidants. They’re fiber-rich, so they’re a great feel-full food. And chia seeds are a great way to add minerals to your diet, including calcium, phosphorus, magnesium, manganese, copper, iron, and zinc.
Who does love Chocolate? I mean especially us ladies… Any excuse to eat it, I am in. Here is an easy go to recipe that won't leave you with the guilt.
Ingredients:
- 1 & 1/4 cup to 1 & 1/2 cup unsweetened almond milk/ coconut milk/ organic milk, as needed to thin out
- 1/4 cup chia seeds
- 1 tbsp cocoa powder
- 1 tsp cinnamon
- 2 tbsp powder (I buy it at Bulk Barn)
- 1 tbsp pure coconut nectar/ grade B maple syrup
- pinch of cayenne, optional for my Mexicans ;)
Method:
- In a large bowl, whisk together all of the ingredients (starting with 1 & 1/4 cup liquid of choice) until the clumps are gone. Place in fridge for at least 1 hour, until thick or overnight. Stir well, add more milk if desired to achieve the thickness you desire, and serve chilled.
- You can also heat on the stove top and serve it warm. It’s nice with a fresh berries on top.
Nutritional Info: ( 200 kcals, 12 grams fat (healthy fat from chia/almond), 26 grams carbs, 15 grams fiber, 9 grams sugar, 8 grams protein.
Note: If you blend it after 2 hours it will be more like a traditional pudding. Depends on the consistency you like.
