Healthy Banana Chocolate Cookies (gluten and dairy free)
These fluffy, moist (yes i said it), quick cookies are easy to whip up in a hot minute. They are simple and don't require a lot of time. They are perfect for when you just need to satisfy that sweet tooth.
Ingredients:
2 ripe organic bananas, mashed 2 eggs 1/4 cup coconut oil, melted 3/4 cup almond butter ¼ cup raw local honey/ or grade B maple syrup ½ cup coconut flour 1 tsp cinnamon
1/3 cup coconut milk ¼ tsp salt Pinch nutmeg or pumpkin spice ½ cup pecans or walnuts, chopped ½ cup dark chocolate chunks
chopped up apple (optional)
Preheat your oven to 325. Combine the first five ingredients in a large bowl and blend until smooth. Add your coconut flour and spices and blend again until everything is incorporated. Stir in the nuts of your choice and chocolate chunks with a spoon. Drop your better into a lined muffin pan. You can fill the liners fairly full, as these muffins (not containing any baking powder) will not rise very much at all. Bake at 325 for approximately 22 minutes, or until the muffins pass the toothpick test. This recipe yields about 12 muffins. 12 muffins do not last long.
