Sweet Potato Fries(baked)

This is a recipe that can be altered in many ways, depending on your taste preferences or what you have available.

Sweet potatoes are a great alternative for traditional carbohydrates and are packed with Vitamin A and C (making them a skin superfood). Make sure you leave the skins on for added fiber and nutrients. Make sure you always add a healthy fat to them so you can absorb your beta-carotene!  1 medium sweet potato only has about 100 calories. I assure you, these will satisfy your cravings for french fries.

Ingredients:

  • 4 medium sweet poatoes
  • 2 cloves garlic, minced
  • 1 tsp bragg's liquid aminos/ coconut aminos
  • 1 tbsp rosemary
  • 1 tsp coarse sea salt
  • 1 tbsp olive oil/ coconut oil

Directions:

  1. Preheat oven to 425 degrees F. Line two baking sheets with parchment paper.
  2. Cut sweet potatoes any way you like. I like to do thin round ones or pencil shaped.
  3. Add sweet potato fries to a large bowl, along with oil, garlic, salt and seasonings of choice . Toss to coat fries.
  4. Place in oven and bake for 15 minutes, then flip fries and bake again for another 10-15 minutes or until fries become slightly golden brown and begin to crisp up a bit.
  5. Taste fries and add additional seasons if desired.
  6. Enjoy immediately! Serves 4
  7. (If you have leftovers, throw them in eggs the next am!)

  • orange/lemon with zest
  • parmesan cheese
  • nori salt
  • cayenne
  • cumin
  • paprika
  • lemon pepper
  • sesame oil
  • red pepper flakes
  • fresh herbs

 

Note: If you like them extra crispy, whisk 2 egg whites together and mix with the spices (no oil). Mix the raw fries in a bowl with the mixture and bake the same way as directed above!
