Kale Salad with Shiitake Mushrooms

This recipe is from my school, Bauman College, with my own twist added. Hope you enjoy.

 

Ingredients:

6 cups kale, chopped

6 shiitake mushrooms, thinly sliced

Dressing:

1 tablespoon olive oil

1 tablespoon sesame oil

1 lemon

1 teaspoon tahini

2 teaspoons ume plum vinegar

dash sea salt

2 tablespoons sesame seeds

 

Method:

  1. In a large bowl, combine kale and olive oil
  2. Massage the kale for a couple of minutes until it looks slightly wilted
  3. Add mushrooms, and remaining dressing ingredients
  4. Sprinkle with salt and sesame seeds

( I added organic chicken sausge; you can also add any protein you like)

( For vegetable additions, you could add shreedded carrots, avocado, different nuts)
